Quick And Easy Afternoon Fruit Bundt Cake



Tastes really good there was a little of the batter left over so I made me a fruit cake pancake because I couldn't possibly wait until 5pm. You know I like to cheat with my recipes so if you need a quick easy delicious fruit cake recipe let me know.

    1. I'm good thanks. This is my easy fruit cake recipe - Juice and zest of two oranges add handful of chopped apricots, handful chopped raisins, handful chopped currants to the juice and zest let sit for a while stir occasionally. Pilsbury lemon cake mix, make as per instructions but replace water with the orange juice, strain away from the dried fruit add dried fruit later. Add 1 extra egg, 1tsp cinnamon powder, 1 tsp ginger powder, 1 tsp vanilla, mix well with machine or for two minutes by hand. Pour into cake pan, sprinkle in/gently stir in the handful of chopped apricots, handful chopped raisins, handful chopped currants, also a handful of chopped walnuts. They will sink in as it bakes. Bake at 350F/180C for 40 mins.

    3. Make sure you oil and lightly flour the bundt cake tin first, always pre-heat oven before hand, give the cake time to cool off once baked (1 hour) before turning out, loosen around edges first. Enjoy!
