Pear and Roquefort Salad YUM!

Ingredients-
1 Romaine lettuce cut into large bite pieces
2 pears - peeled, cored and chopped
50grms Roquefort cheese cut into small pieces
1/2 cup pecans (caramelised) or pine nuts browned slightly to enhance taste

For dressing-
1/3 cup olive oil
3 tablespoons red wine vinegar or an apple vinegar
1 tablespoon honey
1 teaspoon mustard
1 clove garlic crushed
1/2 teaspoon dried mint
1/2 teaspoon salt
Fresh ground black pepper to taste

Takes 10 minutes to prepare. Best not to cut pear or put on dressing til you serve salad, to keep everything crispy and fresh looking. You may not need all dressing so put a couple of spoons on, mix and try.

It was fabulous! I used pine nuts today, it was still great. Roquefort can be bought at Carrefour (own brand 150grms for KD 1.900).

Thank you Malgosia it really was as easy as you said. x

With the rest of the Roquefort try this for canapes or a special snack. Takes 5 mins :O)
Toast some sliced rounds of baguette bread. Put a teaspoon of Roquefort on top, a walnut and trickle with a little honey. Place in oven to warm through a little.
Heaven!

  1. when i do it, i usually use chopped walnuts, and for the dressing i use yellow oil (cornflower for example) and add one table spoon of walnut oil. this is even better if you use endives instead of lettuce. Enjoy!
